Today’s recipe is one I used to eat during my childhood. In El Salvador, we called these chocolate cupcakes “Pinguinos,” however, here in the US I have noticed they are called hostess cupcakes. So if you have been looking for a gluten free vegan hostess cupcakes recipe, I got you!
Also, this recipe happens to be perfect to make soft gluten free vegan cupcakes! I know this is the biggest struggle when you bake gluten free and without eggs, that your cakes might end up coming out harder than a rock. If you prefer to make them vanilla flavor or lemon flavor, feel free to change the chocolate from the dough, at the end it will yield the same fluffy gluten free vegan cupcakes.
