This is a perfect cheap and easy vegan recipe if you are new to eating plant based or if you will like to eat more plant based meals throughout the week. As someone who is allergic to nuts, Indian cuisine has been always scary as they cook with my most severe allergens, but I’ve learned that Indian cuisine is so flexible, spices do the trick and we can enjoy a nut free vegan curry or a dairy free veggie curry without any issues.
