This video has been highly requested and to be honest I hope that those who have food allergies and food restrictions similar to mine can get inspired by some of the dishes I show in this video. Having food allergies restricts you from a lot of food options and there is so much more awareness needed for others to understand what it means to live with food allergies. It’s not a choice, it’s a daily life threat… if you consume something you are allergic to it can result in severe reactions and ER visits.
When you have food allergies it’s easier to cook at home, because you have full control of how you cook and which ingredients you use. I personally follow a plant based diet, as I prefer to not consume meat. One of the reasons why was I so worried about going vegan it’s because of my peanut and soy allergy, as a lot of vegans consume nuts and soy for meat replacement.
In my case, I am allergic to soy, tree nuts, peanuts, shellfish, eggs, dairy, and wheat. In addition, I have a sensitivity to pea protein, lentils, sesame seeds, and sunflower seeds, so you can imagine navigating a vegan diet can get challenging, yet NOT impossible. In this video, I show you three food options for breakfast, lunch, and dinner, they are gluten free vegan, free of my allergens and free of oil.
I switch my meals every day and as time allows, I will continue to share with you more recipes to give you ideas on how you can also cook healthier options. Remember when it comes to nutrition, you have to listen to your body. Your body will tell you what is good and what is bad for you, so learn to read those signals. Your body will tell you it needs more nutrients and in my case now that I follow a plant based diet, my body has been rewarding me with no digestion problems, clear skin, higher energy levels, and gain weights.
I honestly couldn’t believe I was able to put on more weight following a plant based diet, as I grew up thinking I needed animal products to gain weight when in my case, those products were harming my body and causing me to have malabsorption of nutrients. I am healthier now and happy to share my vegan journey with you.
